The Breed matters too

High quality, nutrient dense beef isn’t just a result of good multispecies grass feed, clean water, sustainable farming practices, animal health programs, low stress handling, considered breeding programs and great data analysis and record keeping…..

Lehmann Cattle Company has run Simmental bulls over a mix of predominately Droughtmaster and Santa Gertrudis cows for over 15 years.  And goodness they make GREAT EATING!!

The breed originated in Switzerland and are highly adaptable to their surroundings making them perfect for our country.  They have a calm temperament and produce exceptional calves in our crossbreeding programs.

Our Simmental beef is tender and packed with rich flavours, appealing to health conscious beef lovers that are chasing a good balance of leaner cuts with higher marbled meat without significant fat contents.

How does it compare?? I believe that any meat is a healthy addition to a balanced diet but beef breeds with a high fat content and marble score like Wagyu or Angus, have a meat that can be substantially higher in saturated fats that may affect LDL cholesterol, and because it has higher calories per gram of beef it has the potential to cause unwanted weight gain with overconsumption.  Leaner beef out of breeds like Simmentals, still produce a marbled meat that is a healthier and leaner protein source that is nearly impossible over eat.

Simmental beef has been recognized for its eating quality in recent trials, surpassing Angus in the latest Beef + Lamb New  Zealand (BLNZ) trial.  The breed’s high muscle-to-fat ratio and carcass weight make it a preferred choice for consumers seeking high-quality beef (source: Simmental-Fleckvieh beef does farmers proud | Fleckvieh Society of Australia).

I deeply believe that cattle are not meant to get overly fat, be overfed, eat a grain based diets specifically tailored to create a certain weight gain, marbling or fat score.  They aren’t meant to require excessive supplementation and treatments just to maintain minimal health in a feedlot… or be “finished” over a set numbers of days, just to promote maximum kilograms for profitability.  Let them do their thing, walk the paddocks, eat the grass, be great mums, grow in their own time and treat them well so they turn off amazing quality and superior tasting beef NATURALLY. Enjoy your grassfed and finished, pasture raised, regenerative farmed, Lehmann Cattle Company Beef - Rachael!!
